TIPsy Tuesday: Low Calorie Soda Cake

My mom’s birthday was earlier this month and she asked for a refreshing and low fat cake…  right up my alley!  I decided on a lemon cake with a strawberry frosting.  You can make this cake with any cake mix, but it’s the ingredients you put in that really make bake the cake.

Ingredients for cake: 10 ounces of diet soda {any flavor}, 2 egg whites, 1 box of cake mix {any flavor}

Mix all the ingredients together and bake until a toothpick comes out clean when you poke the cake.  {When you add the soda the cake batter rises really fast like a fun science experiment.}

Ingredients for frosting and filling: 1 tub of fat free cool whip, 1 box of sugar free pudding mix, 1 cup of low fat milk

Mix all the ingredients and place the mix in the fridge for about an hour or two.  Once the frosting is nice and cold use it as a filling and a frosting.  You’ll have to leave the cake in the fridge, but it is yumm!!!!!!!  Enjoy!
